Opening the fridge, you wonder how to dress up the roast for supper. The kids won’t eat vegetables unless you bribe them, though, so throwing together something totally amazing is a must. You’re hoping these three things to do with bell peppers including unstuffed bell peppers will impress them.
1. Skewers
From earliest childhood, we’ve loved anything on a stick. We loved sucking on lollipops, eating corndogs at a ball game, or snatching a pancake-wrapped sausage on a stick for breakfast on the way out the door to go to school.
We, as parents, taught them how to toast marshmallows on sticks over a campfire, so we have no one to blame but ourselves. It makes perfect sense to cook skewers on the barbecue in summer or in the oven for the rest of the year.
Skewers can hold anything at all: cherries, pineapple, huge mushrooms, any color bell pepper, purple onions, steak chunks, chicken chunks, pork, lamb, and the list goes on. Your imagination is the only limit to what can be cooked on a skewer. Since it’s on a stick, the kids will love it.
2. Pizza
It’s a good thing King Umberto 1 and Queen Margherita of Savoy stopped off in Naples in 1889. There, restaurateur Raffaele Esposito was asked to create a pizza for the royal pair. He topped his creation with the colors of the Italian flag in tomatoes, mozzarella, and basil.
Today, the sky’s the limit regarding what can go on a simple bread shell. Lots of people toss bacon, ham, sausage, and eggs on a shell to make a breakfast pizza. Others make their favorite sandwich on a pizza crust with extra cheese, of course. One of the most popular is the Philly cheesesteak pizza.
Inventive cooks are using lamb, shredded pork, slices of beef, and seafood of all types on pizza. Veggies are cut in full slices instead of being finely chopped so you really get the flavor of the tomato, peppers, and onions. Exotic cheeses are being used, and the whole idea is a taste treat par excellence.
Pizza is a crowd pleaser appropriate at any time of the day or week. Many churches have socials after services with tables full of pizza. Ball teams, swimming pools, school classes, offices, and everyone in between loves pizza.
